Brew the espresso or coffee using any preferred method.
Separate the egg white from the yolk.
Combine the yolk with 1-2 teaspoons of sugar, and pour in the coffee.
Whisk the ingredients into a fluffy mixture.
Add 3-4 tablespoons of sugar to the egg white and whisk until a thick, dense foam forms.
Pour the coffee-yolk mixture into a preheated cup.
Top it with a generous dollop of whipped egg white.
Sprinkle with finely grated lemon zest.
