Method
  1. Brew the espresso or coffee using any preferred method.

  2. Separate the egg white from the yolk.

  3. Combine the yolk with 1-2 teaspoons of sugar, and pour in the coffee.

  4. Whisk the ingredients into a fluffy mixture.

  5. Add 3-4 tablespoons of sugar to the egg white and whisk until a thick, dense foam forms.

  6. Pour the coffee-yolk mixture into a preheated cup.

  7. Top it with a generous dollop of whipped egg white.

  8. Sprinkle with finely grated lemon zest.
