Finely chop the chocolate into small pieces and whisk it with a mixer or electric handheld whisk until melted and smooth. Tip: The finer the chocolate, the faster it will melt in the hot milk.
Pour the chocolate and milk mixture into a serving glass.
Slowly pour the espresso or strong coffee into the glass in a thin stream to avoid disrupting the chocolate layer.
Whip the chilled cream with a mixer or electric handheld whisk until it is creamy.
Carefully spoon the whipped cream into the glass, being mindful of not disturbing the layers.
Sprinkle grated bitter chocolate or chocolate chips on top of the drink, if desired.
To savor each layer separately, sip the Bicerin through a cocktail straw.
