Ingredients

  • ‌30 ml (1 fl oz) espresso or coffee
  • 15 ml (1/2 fl oz) lemon juice
  • 25 ml (5/6 fl oz) sugar syrup
  • 50 ml (1 and 2/3 fl oz) ginger beer
  • Lemon slices for serving
  • 2-3 ice cubes

For sugar syrup

  • 100 g (3 and 1/3 oz) sugar
  • 60 ml (2 fl oz) water

‌Method

  1. Prepare sugar syrup: mix white sugar and water in a saucepan, place over medium heat and constantly stir until the sugar dissolves.
  2. Brew the espresso or coffee in any preferred way.
  3. Fill a glass for serving with ice.
  4. Pour the sugar syrup, lemon juice, and ginger beer over the ice, trying to maintain distinct layers. Use a bar spoon to layer the ingredients.
  5. Lastly, slowly pour over the coffee.
  6. Garnish the glass with a lemon wedge.

Tip! Sugar syrup can be stored in the refrigerator for up to a week.
