Romanian Coffee is made by adding cocoa and whipped cream, which gives the drink a smoother texture and imparts a hint of chocolate in the aftertaste. Strong yet soft, it will gently wake you up or serve a perfect conclusion to a hearty meal. For a vegetarian version, you can use whipped non-dairy cream.

Combine the ground coffee, cocoa powder, and sugar in a cezve or coffee pot. Add water.
Heat on a low flame, but do not bring the mixture to a boil.
Just before it reaches boiling point, remove the cezve from the heat.
Pour the coffee into a serving glass through a fine sieve to strain the grounds.
Garnish the finished coffee with whipped cream.
Sprinkle icing sugar on top.
